Granita and spumone are the Italian names for the soft, water ices which are also called sorbets or sherbets elsewhere. Granita should have a slightly granular texture; it can be made from sweetened fruit juices, soft fruit or coffee.

Ingredients

Quantity Ingredient
150g freshly ground roast coffee
6 tablespoons sugar
1.06 litres water, boiling
cream, whipped, to serve
ground coffee, to serve (optional)

Method

  1. Put coffee and sugar into a warmed earthenware jug and pour boiling water over. Cover jug, stand in a saucepan of boiling water and leave to infuse off the heat for 20–30 minutes. Cool.
  2. When cold, strain through a filter paper. Pour into a shallow ice cream tray and freeze, without stirring, until frozen to a granular but solid mush. Serve in tall glasses, topped with whipped cream and a sprinkling of ground coffee, if desired.
