Ingredients

Quantity Ingredient
2 egg whites
500g pure icing sugar, sifted
1 teaspoon lemon juice
food colouring, as desired

Method

  1. Place egg white in a bowl and beat lightly. Add icing sugar 1 tablespoon at a time, beating continuously until mixture is very stiff and stands in peaks. Blend in lemon juice and food colouring. Keep icing covered with a damp cloth to prevent it hardening too quickly. This will cover a 20 cm cake and can be used for piped decorations, lettering, etc.
