Ingredients

225g plain flour
220g sugar
1 teaspoon baking powder
1/4 teaspoon salt
125g butter
2 eggs, beaten
125ml milk
1 lemon, zested
60g walnuts, chopped

Lemon syrup

Quantity Ingredient
1 lemon, juiced
55g sugar

Method

  1. Sift flour, sugar, baking powder and salt into a bowl. Rub in butter using fingertips. Mix beaten eggs and milk, stir into flour mixture, then fold in lemon zest and walnuts. Pour into a greased and base-lined 21 × 15 cm loaf tin. Bake in a preheated moderate oven for 1¼ hours or until a skewer inserted in centre comes out clean.
  2. To make lemon syrup, mix lemon juice and sugar together. When cake is cooked and still hot, pour over the top. Allow to cool in tin.
