125g * mayonnaise [rid:4557]
2 teaspoons mixed fresh herbs, chopped
1/2 teaspoon dijon mustard
1 lobster, cooked, halved and flesh cubed
lettuce leaves
hard-boiled eggs, sliced, to garnish
tomato, cut into wedges, to garnish
cucumber, sliced, to garnish
sprig fresh dill, to garnish
or fresh lemon balm, to garnish

Method

  1. Flavour mayonnaise with chopped herbs and mustard. Spoon over lobster meat in shells. Serve chilled on crisp lettuce leaves, garnished with egg slices, tomato wedges, paper-thin cucumber slices and a sprig of fresh dill or lemon balm.
