Fruit squares

Ingredients

Quantity Ingredient
230g brown sugar
150g rolled oats
225g plain flour, sifted
1/2 teaspoon salt
185g butter
675g * mincemeat [rid:11482]
1 egg, beaten

Method

  1. Combine brown sugar, rolled oats, flour and salt and mix together well. Rub in butter until mixture resembles coarse breadcrumbs. Spread half the mixture into a 28 × 19 cm lamington tin. Cover with mincemeat, spread the remaining crumb mixture over the top. Gently brush with beaten egg.
  2. Bake in a preheated hot oven for 20–25 minutes. Allow to cool in tin, then cut into squares, bars or diamond shapes as preferred.
