Greek meat patties

Ingredients

500g minced veal
250g minced pork
3 thick slices stale bread, crusts removed
1 onion, finely chopped
1 garlic clove, crushed
3 tablespoons parsley, chopped
1 teaspoon fresh mint, chopped
1 teaspoon fresh basil, chopped
1 tomato, peeled and chopped
1 egg
1 tablespoon vinegar
1 teaspoon bicarbonate of soda
1 1/2 teaspoons salt
freshly ground black pepper
plain flour
oil, for shallow-frying

Method

  1. Combine meats. Soak bread in cold water, drain and squeeze dry. Mix bread with onion, garlic, herbs, tomato, egg and vinegar. Blend in bicarbonate of soda, salt and pepper. Add meat and mix in lightly and thoroughly, using hands if necessary. Chill for 1 hour.
  2. Roll into balls, dust with flour and flatten into rounds about 5 cm in diameter. Heat oil in a frying pan and shallow-fry patties over high heat for 4–5 minutes on each side. Patties should puff up. Drain on crumpled paper towels and serve immediately.
