Meatloaf with tahini

Ingredients

750g minced lamb or beef
2 onions, finely chopped
30g parsley, chopped
1 teaspoon salt
1/2 teaspoon ground allspice

Sauce

Quantity Ingredient
3 tablespoons tomato paste
2 tablespoons tahini
3 tablespoons white vinegar
salt
ground allspice

Method

  1. Place meat in bowl. Add onions, parsley, salt and allspice and knead well, first dipping your fingers in cold water. Press meat mixture into a greased 21 × 11 cm loaf tin. Bake in a preheated hot oven for about 15 minutes or until loaf is lightly browned.
  2. Meanwhile, prepare sauce by mixing together tomato paste, tahini and vinegar. Season with salt and allspice. Add enough water to blend ingredients to a thin but creamy sauce. Pour enough sauce over meatloaf to cover, and return to oven. Bake for a further 1 hour, basting occasionally with the remaining sauce. Serve with rice.
