Mince pies can be made ahead, frozen and reheated when required.

Ingredients

Quantity Ingredient
90g butter
55g caster sugar
1 egg
225g plain flour
1/2 teaspoon baking powder
egg, beaten, to glaze
225g Mincemeat
icing sugar, sifted

Method

  1. Cream butter with sugar. Add egg and beat well. Sift flour and baking powder and stir into creamed mixture. Knead lightly on floured board. Wrap dough in plastic wrap and chill for 1 hour.
  2. Roll the dough out thinly and cut into rounds to fit lightly greased patty tins. Cut same number of smaller circles to fit tops of pies. Moisten edges with beaten egg and put 1 heaped teaspoon mincemeat into each. Make a small slit in each pastry lid or cut with a small star cutter. Top each filled pie with lid and press edges of pastry well to seal. Glaze with beaten egg.
  3. Bake in a preheated moderate oven for 20–30 minutes or until pale golden brown. Remove from oven and dust with icing sugar.
