Ingredients

Quantity Ingredient
500ml water
pinch salt
2 sprigs fresh mint
1 teaspoon sugar
1kg peas, shelled
30g butter
1 tablespoon fresh mint, chopped

Method

  1. Bring water to the boil, add salt, mint sprigs and sugar, and stir in peas. Cook uncovered for 15 minutes or until tender.
  2. Drain peas well, refresh under cold water and return to pan with butter and chopped mint. Shake peas over low heat until butter has completely melted.
