Also known as pudding spice, a little jar of this spice mix is very convenient for those who are addicted to spicy food or make rich fruit cakes or puddings. It is a mixture of the sweet spices used in English cookery – cinnamon, cloves and nutmeg – but it may also contain Jamaica pepper or allspice and sometimes ground coriander, depending on the manufacturer’s recipe.
