Encyclopedia of Food and Cookery

A strongly flavoured coffee, originally grown in the Yemen. Most people find it too rich so it is usually blended with milder coffee beans to make a suitable mix.

The word ‘mocha’ is also used to describe cakes, desserts, biscuits, etc., flavoured with coffee. It is often applied as well to a mixture of coffee and chocolate, whether it is used as a beverage or flavouring.
