This pie may also be made with fresh raspberries, strawberries or other fresh or tinned fruit such as plums or apricots. Be sure that tinned fruits are very well drained. It may be kept in the refrigerator for 1–2 hours before serving.

Ingredients

4 egg whites
230g caster sugar
125ml cream
200g fresh or tinned peaches, sliced
pistachio nuts, chopped, to decorate

Method

  1. Line a baking tray with non-stick baking paper. Draw on it 2 circles 18 cm in diameter. Using a rotary beater or an electric mixer, beat egg whites until they form soft peaks. Sift 2 tablespoons caster sugar over whites and beat again until mixture is stiff and shiny. Sift half the remaining sugar over whites and, using a large metal spoon, fold it in.
  2. Fit a large plain or rose tube into a piping bag and fill the bag with meringue mixture. Pipe a ring of meringue round one circle just inside the line. Pipe onto outer edges of paper 8–12 baby rosettes with bases totalling the same width as meringue ring’s diameter. Pipe remaining meringue mixture inside other circle and spread it evenly into a flat disc.
  3. Bake in a preheated cool oven for 45–60 minutes or until crisp when tapped. Remove from oven. Lift off rosettes with a thin knife and place on a wire rack. Turn paper upside-down and carefully peel it off meringue ring and disc. (If you try to prise these pieces off the paper, they are likely to splinter.) Lift very carefully and place on a wire rack to cool.
  4. Before serving, whip cream until stiff and fill a piping bag fitted with a 1 cm rose tube. Place meringue disc on a serving plate and pipe a ring of cream round edge. Set meringue ring on top and press down very gently. Arrange peach slices inside ring in concentric circles. Pipe a little cream on base of each rosette and arrange rosettes evenly spaced on the ring, pressing each one down gently to secure. Pipe remaining cream round ring to decorate and top with chopped pistachios. Chill until serving time.
