Serve this deliciously tangy meatloaf with lots of creamy mashed potatoes and buttered Brussels sprouts.

Ingredients

Quantity Ingredient
1 egg, beaten
80ml evaporated milk
1 tablespoon vinegar
1 tablespoon treacle
1 tablespoon french mustard
120g fresh breadcrumbs
1 small onion, finely chopped
1/2 teaspoon salt
750g minced beef

Sauce

Quantity Ingredient
250ml beef stock
2 teaspoons vinegar
2 teaspoons dry mustard
1 teaspoon treacle
2 tablespoons cornflour
125ml cold water

Method

  1. Combine egg, evaporated milk, vinegar, treacle, mustard, breadcrumbs, onion and salt. Add beef and mix well.
  2. Pack mixture lightly into a 21 × 11 cm loaf tin. Bake in a preheated moderate oven for 1¼ hours.
  3. Meanwhile, make the sauce. Combine stock, vinegar, mustard and treacle in a saucepan and beat until smooth. Blend together cornflour and cold water, add to pan and cook, stirring, until thickened and bubbly. Serve meatloaf hot, with mustard sauce.
