Oat and raisin bread

A delicious tea bread, served sliced with butter.

Ingredients

Quantity Ingredient
1 egg, beaten
80g brown sugar
2 tablespoons golden syrup, warmed
310ml buttermilk
60g butter, melted
65g rolled oats
150g wholemeal flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 teaspoon bicarbonate of soda
85g raisins

Method

  1. Beat egg with sugar, golden syrup, buttermilk, butter and rolled oats. Let stand for 5 minutes.
  2. Sift flour, baking powder, salt and bicarbonate of soda and fold into oat mixture. Stir in raisins lightly. Turn into a greased and lined 20 × 10 cm loaf tin and spread batter evenly.
  3. Bake in a preheated moderate oven for 1 hour or until a skewer inserted in centre comes out clean. Cool on a wire rack. Serve sliced and spread with butter.
