Braised prawns with snow peas

Ingredients

Quantity Ingredient
750g raw prawns, shelled and deveined
1 tablespoon chinese rice wine or dry sherry
1 teaspoon cornflour
1 teaspoon soy sauce
125g snow peas
5-6 tablespoons oil

Seasoning

Quantity Ingredient
1 teaspoon salt
1/2 teaspoon sugar
1 teaspoon soy sauce

Method

  1. If prawns are large, cut in half. Put into bowl with wine or sherry, cornflour and soy sauce. Mix well, then cover and chill for at least 30 minutes.
  2. String snow peas, if necessary.
  3. Mix all ingredients for seasoning together.
  4. Heat 4 tablespoons oil in a wok or frying pan and cook prawns, stirring over high heat until colour changes. Remove.
  5. Add a further 1–2 tablespoons oil to wok and stir-fry snow peas for 2 minutes. Return prawns to wok and add seasoning. Toss until heated through, and serve immediately.
