Orange, avocado and prawn salad

This luxury salad would make a good main course for a small dinner party, yet takes only 10 minutes or so to put together. Heat bread rolls or crusty bread in the oven to serve with the salad.

Ingredients

Quantity Ingredient
2 ripe avocados, peeled, stoned and sliced lengthways
2 large oranges
500g cooked prawns, shelled and deveined
4 sticks celery, chopped
1 tablespoon chives, snipped
2 cos lettuces
or 1 head lettuce
8-10 walnut halves

French dressing

Quantity Ingredient
2 tablespoons lemon juice
6 tablespoons olive oil
1 teaspoon fresh oregano, chopped
or pinch dried oregano
freshly ground black pepper
salt

Method

  1. Mix all ingredients for dressing together by shaking in a screwtop container. Pour half over sliced avocados.
  2. Peel oranges, removing outside membrane, and cut between membranes to remove skinless segments.
  3. Combine prawns, oranges, celery and chives.
  4. Line a large bowl with lettuce leaves. Place prawn mixture in centre and arrange avocado slices and walnut halves over it. At the table, pour remaining dressing over salad and toss lightly to combine.
