Ingredients

Quantity Ingredient
1 large ripe mango, peeled, seeded and chopped
or 425g tinned mango slices, drained and chopped
1 small ripe pawpaw, peeled, seeded and chopped
2 tablespoons rum
1 tablespoon lime or lemon juice
2 tablespoons sugar
250ml cream, whipped

Method

  1. Purée mango and pawpaw in a food processor or blender, or push through a nylon sieve. Transfer to a bowl and stir in rum, juice and sugar. Fold in cream. Cover and chill for several hours.
  2. Spoon into a serving dish and serve with extra whipped cream and crisp biscuits.
