Peach and plum compote

Ingredients

Quantity Ingredient
220g sugar
250ml water
1 orange, rind thinly peeled and cut into fine strips
1 tablespoon lemon juice
2 tablespoons cointreau
4 large ripe peaches, peeled
4 large ripe plums, peeled

Method

  1. Dissolve sugar in water in a saucepan over low heat. Bring to the boil, then add orange zest strips and boil for 5 minutes. Cool.
  2. Add lemon juice and Cointreau to taste to cooled syrup. Place whole fruit in serving bowl and pour over syrup. Cover and chill before serving.
