Ingredients

6 small pears
110g sugar
125ml red wine
125ml water
strip lemon peel
1 cinnamon stick

Method

  1. Peel pears, leaving stalks. Dissolve sugar in wine and water in a saucepan, then add lemon peel and cinnamon and bring to the boil. Boil 1 minute.
  2. Arrange pears upright in ovenproof dish and pour syrup over. Cover and cook in a preheated moderate oven for about 1 hour or until tender. If pears are very hard, they may take as long as 2 hours.
  3. Arrange pears in serving dish and pour over wine syrup. Serve cold, accompanied by whipped cream if desired.

Variation

  • If pears are almost ripe, they may be cooked over low heat on top of stove in prepared wine syrup. Remove pears with a slotted spoon when tender, reduce syrup over high heat and pour over pears.
