Ingredients

125g butter, melted
110g sugar
90g desiccated coconut
150g plain flour, sifted
1 tablespoon cocoa powder
1/2 teaspoon natural peppermint extract
1 teaspoon baking powder
30g cornflakes, lightly crushed

Peppermint butter icing

Quantity Ingredient
90g butter
85g icing sugar, sifted
natural peppermint extract
30g dark chocolate, melted with 15 g butter, to decorate

Method

  1. Cream butter with sugar, then beat in coconut, flour, cocoa powder, peppermint extract and baking powder. Mix well. Stir in cornflakes.
  2. Press into a 30 × 25 cm Swiss roll tin; mixture should be nearly 1 cm thick. Bake in a preheated moderate oven for about 20 minutes. Cool.
  3. To make icing, cream butter until light, then gradually beat in icing sugar. Flavour to taste with peppermint extract.
  4. When cake is cold, spread roughly with icing and drizzle over melted chocolate mixture. Cut into fingers to serve.
