Ingredients

Quantity Ingredient
1 small ripe pineapple, peeled
2 tablespoons brown sugar
1 orange, zested
pinch cinnamon
pinch nutmeg
125ml fresh orange juice
30g butter
4 tablespoons rum
ice cream, to serve
or cream, to serve

Method

  1. Cut pineapple into quarters lengthways and remove core from each wedge. Cut each wedge into slices. Arrange slices in buttered ovenproof dish.
  2. Mix brown sugar, orange zest and spices, sprinkle over pineapple then pour over juice. Dot with butter. Bake in preheated hot oven (200°C) for about 15 minutes.
  3. Warm rum, ignite and pour flaming over pineapple at table. Serve with cream or ice cream.

Variation

  • A medium tin pineapple rings, drained, may be substituted for fresh.
