1 quantity Duchess potatoes
oil, for deep-frying
flour, to coat
egg, to coat
breadcrumbs, to coat

Method

  1. Roll potato mixture into small balls or barrel shapes. Coat with flour, then beaten egg and finally breadcrumbs.
  2. Deep-fry for 5–6 minutes and drain on paper towels.
  3. If preferred, mould potato mixture into flat cakes, coat with flour, egg and breadcrumbs and shallow-fry in a small amount of butter.
