Shortcrust pastry in the food processor

The food processor makes tender, light pastry in moments. It makes sense to keep some diced, frozen butter on hand for this recipe.

Ingredients

Quantity Ingredient
300g plain flour
1/4 teaspoon salt
2 eggs
1 tablespoon cold water
squeeze lemon juice
125g butter, frozen and diced
or 125g cooking margarine, frozen and diced
or 125g mixture of butter and cooking margarine, frozen and diced

Method

  1. Place flour, butter and salt in food processor with steel blade in place. Process, turning on and off rapidly, until butter is cut into flour and mixture looks like coarse breadcrumbs.
  2. Mix eggs with water and lemon juice. With motor running, pour liquid quickly through feed tube. Do not use it all unless necessary – stop pouring as soon as a ball of dough forms round blade. Wrap in plastic wrap and chill for 1 hour before using.
  3. Unless otherwise indicated in recipe, bake unsweetened rich shortcrust pastry in a preheated hot oven, and sweetened pastry in a preheated hot oven.

Variation

  • For sweet pastry, add 80 g caster sugar to processor with flour, butter and salt.
