In this recipe the quail are marinated with herbs in oil, which helps to ensure that they do not dry out during grilling. Take care not to overcook the quail.

Ingredients

Quantity Ingredient
8 quail
125ml olive oil
2 tablespoons dried oregano or marjoram
4 bay leaves, crumbled
freshly ground black pepper
salt
lemon wedges, to serve

Method

  1. Split quail down back and open out flat. Flatten with blade of cleaver.
  2. Place in a large shallow dish and sprinkle with olive oil, herbs, salt and pepper. Cover and marinate for 2–3 hours, turning quail once or twice.
  3. Grill over hot coals, or under a preheated grill, for 10–15 minutes or until just cooked and brown. Serve with lemon wedges.
