Ingredients

Quantity Ingredient
2 large quinces, peeled, cored and thinly sliced
2 egg whites
55g caster sugar

Method

  1. Cook quinces in very little water until quite soft. Purée through sieve or in blender and cool.
  2. Beat egg whites until stiff. Gradually fold in quince purée and sugar to taste until smooth and well mixed. Chill. Serve with cream or custard, if desired.
