A pudding so nourishing and satisfying that it would take only soup and a side salad to complete the meal.

Ingredients

Quantity Ingredient
555g Boiled rice, brown
750ml milk
3 eggs, beaten
115g brown sugar, plus extra to serve
1/2 teaspoon mixed spice
95g mixed dried fruit
sour cream, to serve

Method

  1. Mix rice with remaining ingredients except extra brown sugar and sour cream.
  2. Spoon pudding into a greased shallow ovenproof dish. Bake in a preheated moderate oven for 30 minutes. Remove from oven and sprinkle a little more brown sugar evenly over top.
  3. Return to oven and bake for 10 minutes more. Serve warm with sour cream slightly sweetened with brown sugar.
