Ricotta cheese with sugar and rum

Ingredients

Quantity Ingredient
500g ricotta cheese
2 tablespoons sour cream
115g caster sugar
4 eggs, separated
6 tablespoons rum
Almond macaroons, to serve

Method

  1. Beat ricotta with sour cream, then mix in sugar. Add egg yolks one at a time, beating until mixture is light and creamy, then stir in rum. Beat egg whites until stiff, and fold into mixture.
  2. Spoon into 6 individual glasses. Chill for several hours before serving accompanied by almond macaroons.
