Use dark bread or raisin bread spread with butter or cream cheese.

Ingredients

Quantity Ingredient
100g dried apricots, diced
55g brown sugar
125ml orange juice
80g almonds, walnuts or peanuts, finely chopped
2 tablespoons currants

Method

  1. Simmer apricots with brown sugar and orange juice for about 35 minutes or until mixture is soft and liquid has evaporated. Watch carefully and stir often to ensure that the mixture does not scorch. Remove from heat and mash with a fork, then stir in nuts and currants. Store, covered, in refrigerator. Keeps several weeks.
