Ingredients

1 onion , sliced
1 carrot, sliced
1 small stick celery with leaves, sliced
1 garlic clove
125ml water
350g broccoli, coarsely chopped and cooked
1 teaspoon salt
generous pinch cayenne
100g macaroni, cooked
500ml chicken stock
125ml cream
sour cream, to serve

Method

  1. Place onion, carrot, celery, garlic and water in a saucepan, bring to the boil and simmer, covered, for 10 minutes.
  2. Add broccoli, salt, cayenne and macaroni. Purée in a blender or food processor. With motor running, add stock and cream. Alternatively, sieve broccoli mixture and stir in stock and cream. Chill and serve topped with sour cream.
