Ham and spinach stuffing

Sufficient for a shoulder of veal for roasting or a breast of veal for braising

This stuffing is superb with veal.

Ingredients

Quantity Ingredient
1/2 bunch spinach
freshly ground black pepper
nutmeg
155g ham, finely chopped
1 small onion, finely chopped
30g butter
80g fresh breadcrumbs
salt

Method

  1. Place spinach in a heavy saucepan with a little salt, pepper and nutmeg. Cover the pan and cook for 3–4 minutes until softened, shaking occasionally to prevent sticking. Drain well and, when cool enough to handle, squeeze out as much water as possible with your hands.
  2. Chop spinach finely and place in a bowl with ham. Season with salt and pepper.
  3. Cook onion gently in butter until soft and golden. Add to spinach and ham with a pinch of nutmeg and breadcrumbs and mix ingredients lightly together with a fork. Adjust seasoning.
