Quick mushroom sauce

For hamburgers, steak or lamb cutlets.

Ingredients

Quantity Ingredient
butter
90g mushrooms, thickly sliced or quartered
1 teaspoon cornflour, (optional)
1-2 tablespoons lemon juice
freshly ground black pepper
salt
170ml cream
or 170ml chicken stock

Method

  1. Cook meat in a little oil and butter, then remove to a heated dish. Add butter to pan if necessary to make about 2 tablespoons fat and heat on high heat until foaming.
  2. Add mushrooms and cook undisturbed about 45 seconds, then turn over and cook other side a further 45 seconds. Sprinkle with cornflour, if using, and stir a few moments.
  3. Add cream or stock and bring to the boil, stirring and scraping up brown bits from bottom of pan. Cook for 1 minute. Add lemon juice, salt and pepper. Spoon sauce over meat or serve separately.
