Scrambled egg with smoked salmon

For a special brunch serve this elegant dish with hot toast and Champagne.

Ingredients

Quantity Ingredient
6 eggs
freshly ground black pepper
60g butter
125g smoked salmon, flaked
3 tablespoons cream
60g * mayonnaise [rid:4557]
or 60g thick cream
2 teaspoons fresh dill, snipped
4 slices smoked salmon
sprigs fresh dill, to garnish
salt

Method

  1. Beat eggs and season with salt and pepper. Cook gently in butter, stirring, until set. Fold in flaked smoked salmon and cream. Allow to cool a little.
  2. Serve piled on a dish, with mayonnaise or thick cream spooned over and sprinkled with snipped dill. Fold slices of smoked salmon and garnish dish with these and sprigs of fresh dill.
