Ingredients

850g tinned peach halves
220g sugar
190ml cider vinegar
1 tablespoon cloves
1 tablespoon whole allspice
10cm cinnamon stick

Method

  1. Drain syrup from peach halves into a heavy saucepan. Add sugar, vinegar and spices tied in a muslin (cheesecloth) bag. Boil for 10 minutes, then add peaches and cook for 5 minutes or until peaches are heated through. Remove spice bag.
  2. Pack peaches in hot sterilised jars and fill with hot syrup. Seal and store in a cool, dark place. Good with cold ham.
