500g fresh spinach, stems removed
125g plain yoghurt
1 garlic clove, crushed
freshly ground black pepper
salt

Method

  1. Chop spinach roughly, then cook in covered saucepan, without any water except that which clings to leaves after washing, for about 5 minutes. Drain and cool, then squeeze out excess liquid. Combine yoghurt and garlic and mix with spinach. Season with salt and pepper.
