This is sometimes referred to as eggless mayonnaise. It is the one to use when on a low cholesterol diet or dieting.

Ingredients

Quantity Ingredient
3 teaspoons dijon mustard
1 1/2 tablespoons olive oil
185g low-fat plain yoghurt
1 tablespoon lemon juice
freshly ground white pepper
salt

Method

  1. Place mustard in a mixing bowl. Add oil gradually, beating vigorously with a fork or whisk. Blend in yoghurt. Add remaining ingredients until mixture is smooth. Refrigerate until required.
