Ingredients

2 tablespoons sesame seeds
1 tablespoon coriander seeds
1 tablespoon cumin seeds
50g walnut halves
2 teaspoons ground cinnamon
freshly ground black pepper
2 teaspoons sumac powder
or 1 teaspoon lemon zest, grated
salt

Method

  1. In a heated dry frying pan, dry-roast the sesame seeds until they pop and turn golden brown, shaking the pan constantly. Remove to a mortar or blender.
  2. Toast the coriander and cumin seeds in the same way and add to the sesame seeds. Toast the walnuts until light golden and add to the spices.
  3. Using a pestle or with the motor of the blender grind the seeds, spices and nuts to a fine powder, being careful not to overwork or let the oils be released.
  4. Add cinnamon, salt and pepper to taste and the sumac or lemon zest. Mix well, then pile the mixture in a shallow bowl. Serve alongside a bowl of extra virgin olive oil and pieces of pita or good crusty bread.
