750g zucchini, thinly sliced
freshly ground black pepper
3 tablespoons oil
2 teaspoons parsley, chopped
1 tablespoon fresh oregano, chopped
salt

Method

  1. Put zucchini slices in a colander, sprinkle with salt and leave for 1 hour. Rinse, drain and dry on paper towels.
  2. Heat oil in a large frying pan. Cook zucchini slices until translucent and edges are lightly browned, turning with a spatula to cook uniformly. This should take only 3–4 minutes. Add more oil if needed. Sprinkle with salt, pepper and herbs. Serve with grilled meats or poultry.
