A deliciously spicy recipe for zucchini. Serve as part of a curry meal.

Ingredients

Quantity Ingredient
60g ghee or butter
1 onion, finely chopped
1 small garlic clove, finely chopped
1 teaspoon fresh ginger, grated
1/2 teaspoon ground cumin
3 red or green chillies, seeded and chopped
500g zucchini, thickly sliced
30g creamed coconut
salt
1 teaspoon lemon juice

Method

  1. Melt ghee or butter in a heavy pan and fry onion, garlic, ginger, cumin and chillies for about 5 minutes or until soft.
  2. Add zucchini to the pan and cook for about 15 minutes or until tender, then mash. Add creamed coconut, allow it to melt, then season with salt and lemon juice.
