Zucchini marinated with garlic

This zesty salad can be part of the antipasti tray before an Italian meal or grill.

Ingredients

Quantity Ingredient
750g zucchini, sliced into thin strips about 8 × 2 cm
125ml olive oil
60ml lemon juice
1 tablespoon fresh oregano, chopped
or 1 teaspoon dried oregano
3 garlic cloves, crushed
1/2 teaspoon salt
45g black olives
freshly ground black pepper

Method

  1. Place zucchini in a shallow dish. Combine olive oil, lemon juice, oregano, garlic and salt, mix well and pour over zucchini. Cover, place in a refrigerator and marinate for at least 2 hours.
  2. One hour before serving, transfer zucchini to salad plates with a slotted spoon, reserving marinade. Garnish with olives, sprinkle with pepper and drizzle with reserved marinade.
