Grilled red capsicum with olives and capers

This rustic, simpler version of roasted capsicum is good as a warm salad, but equally enjoyable as an accompaniment to a grill or on a cheese or meat sandwich. I recommend making a double quantity of this dish and keeping it in the refrigerator for when you are making pasta — use it instead of a pasta sauce.

Ingredients

Quantity Ingredient
4 red capsicums
2 tablespoons olive oil
1/2 cup black olives, pitted
1 garlic clove, chopped
1 tablespoon baby capers, drained
a handful herbs such as flat-leaf parsley, oregano, chives or basil, roughly chopped
salt and freshly ground black pepper
a dash balsamic vinegar

Method

  1. Cut the capsicums into quarters, remove seeds and ribs, and prepare as described below. Cut each quarter into two or three strips and place them in a shallow serving dish. Heat the olive oil, olives, garlic, capers and herbs, tossing lightly for only an instant.
  2. Add salt and pepper to taste and a dash of balsamic vinegar and spoon over the capsicums. Cover and leave to stand for at least 30 minutes before serving.

Method

  1. Charring capsicums all in one go over a barbecue, or under a very hot grill, is best, giving them a quarter-turn each time one section is blackened (if charring whole). This can be done over a gas flame, but takes a long time. As each capsicum is done, pop it into a plastic bag and close tightly so the capsicum can continue steaming. This will help the skin come away for easier peeling. Once the charred capsicums have cooled enough to handle, use the back of a knife to scrape off most of the skin, and then rinse off in a bowl of water to remove any stubborn black bits.
