Like most rum-based cocktails, this drink sure packs a punch.

Ingredients

Quantity Ingredient
1 1/2 tablespoons cointreau, or other orange-based liqueur
1/3 cup white rum
1 tablespoon caster sugar
1 tablespoon freshly squeezed lime or lemon juice
2 cups fresh pineapple, cut into small cubes
4 cups crushed ice

Method

  1. Process everything together in a blender or food processor, scraping down the sides a few times until the mixture is very smooth but still frozen. Pour the mixture into two stemmed glasses and finish each off with a sprig of mint or a pineapple leaf if you like.
