Give someone the job of sugar-browning the potatoes – they will be as proud as punch when everyone starts raving.

Ingredients

Quantity Ingredient
24 new potatoes
1/2 cup caster sugar
125g clarified butter, melted

Method

  1. Boil the potatoes in their jackets for 10–15 minutes or until just cooked. Let them cool a little, then peel if the skins are not a good colour.
  2. Melt the sugar in a heavy saucepan over a gentle heat. Continue to cook slowly until it becomes a light brown caramel, stirring to prevent it from burning. Stir in the butter and add as many potatoes as possible without crowding the pan. Shake the pan from time to time until the potatoes are coated with caramel. Remove from the heat and serve as soon as possible.
