This is a sure way of brightening up a festive table – pretty truss tomatoes roasted whole for 10 minutes then topped with torn basil.

Ingredients

Quantity Ingredient
500g baby vine-ripened truss tomatoes
1 tablespoon olive oil
2 garlic cloves, thinly sliced
1 tablespoon balsamic vinegar
6-8 basil leaves

Method

  1. Preheat the oven to 180°C. Snip each truss into two, place in an oven tray, sprinkle over the olive oil, garlic and vinegar, and cook for 10 minutes.
  2. Tear the basil leaves gently or roll into a cigar shape and cut into thin strips. Serve the tomatoes on a heated serving dish, sprinkled with the basil.
