If you haven’t inherited a set of gem irons you may be lucky enough to pick some up at a second-hand shop or garage sale.

Ingredients

Quantity Ingredient
45g butter
2 tablespoons sugar
1 egg
1 cup s.r. flour
A pinch salt
1/2 cup milk

Method

  1. Grease the gem irons and heat in a 200°C oven. Cream the butter and sugar until light and fluffy. Add the egg and beat until well incorporated. Lightly fold in the sifted flour and salt with the milk, and combine until just mixed. Spoon enough mixture to half-fill the gem irons. Bake for 10–15 minutes. Serve warm with butter.
