The marinated pork fillets in this dish are cooked in a spicy red sauce which gives them a unique flavour. Hoisin sauce is available from Chinese food stores and supermarkets.

Ingredients

Quantity Ingredient
500g pork fillet or lean pork
3 tablespoons hoisin sauce
2 teaspoons sugar
3-4 teaspoons light soy sauce
1/2 teaspoon salt
1 tablespoon five-spice powder
2 tablespoons honey
1 tablespoon chinese rice wine
plum or extra hoisin sauce, for dipping

Method

  1. Preheat the oven to 220°C. Combine all the ingredients and brush over the pork. Allow to stand for at least 1 hour. Put on a rack in a baking dish filled with hot water to come below the rack. Roast for 25 minutes. Turn the meat over, brush with the remaining marinade and cook a further 10 minutes, or until a good caramel glaze has formed over the pork. Serve cut into thin slices with plum or hoisin sauce for dipping.
