Method

  1. Place the egg, seasonings and 1 teaspoon of the vinegar in the bowl of a blender or food processor and process for a few seconds. With the motor running, pour the oil in very gradually, ensuring that each addition has been absorbed before adding more. When all the oil has been incorporated, add the remaining vinegar.

Variations

  • To 1 quantity of mayonnaise, add the following:

    Curry mayonnaise: 1 teaspoon curry powder, 1 teaspoon lemon juice, 1 small crushed garlic clove and a pinch of salt.

    Green mayonnaise: 2 teaspoons finely snipped chives and 2 teaspoons finely chopped parsley.

    Roquefort mayonnaise: 1 tablespoon tomato ketchup and 2 tablespoons crumbled Roquefort cheese.
