Ingredients

Quantity Ingredient
4-6 globe artichokes
2 tablespoons olive oil
1 onion, sliced
a sprig oregano
2 large garlic cloves
1 bay leaf
1/2 cup white wine
1 tablespoon freshly chopped parsley
salt and freshly ground pepper

Method

  1. Prepare the artichokes. If large, cut into quarters and put into acidulated water, to cover. Drain and dry thoroughly. In a heavy-based saucepan combine the onion, oregano, garlic, bay leaf, white wine and parsley with the salt and pepper. Add the artichokes, cover and simmer slowly for 40 minutes. Serve warm.
