Ingredients

Quantity Ingredient
2-3 sweet potatoes
60g butter
1 tablespoon oil
1 tablespoon honey
A pinch ground ginger

Method

  1. Preheat the oven to 180°C. Peel the sweet potatoes and cut into even-sized pieces. Put into a saucepan of boiling, salted water, cover and simmer for 5 minutes. Drain. Melt half the butter in a baking dish with the oil. Stir in the honey and ginger. Put the sweet potatoes in a dish and spoon the honey mixture over. Dot with the remaining butter. Bake for 40 minutes, or until tender. Brush with the glaze in the pan every 15 minutes, and turn occasionally. Serve immediately.
