Zucchini, bean and tomato medley

This is a dish that is good on its own or served as an accompaniment. Topped with grated cheese, it becomes a meal in itself.

Ingredients

Quantity Ingredient
1 large onion, sliced
1 garlic clove
2 tablespoons olive oil
a large pinch salt
freshly ground black pepper
1/4 cup chopped parsley
1 teaspoon chopped thyme or oregano
500g green beans
500g zucchini, or patty pan or yellow squash
4 large tomatoes, quartered
1/4 cup water

Method

  1. Saute the onion and garlic in the oil in a heavy-based frying pan. Season with the salt and freshly ground black pepper and add the herbs. Cut the beans into lengths, and the zucchini into chunks. Add the beans, zucchini, tomatoes and water to the pan and simmer, covered, for 8 minutes or until just tender.
