Smoked cod’s roe with horseradish butter

I love cod’s roe, but you rarely see it on fishmongers’ slabs or menus these days. The sustainability issue may have taken it off the culinary map, but I see no reason to disregard the roe of a sustainably caught fish.

Ingredients

Quantity Ingredient
150-200g smoked cod’s roe
1 tablespoon horseradish, freshly grated
50-60g butter, softened
4 slices brown or white bloomer-type bread

Method

  1. Thinly slice the cod’s roe (unless it’s soft enough to spread). Mix the horseradish with the butter. Toast the bread on both sides, spread generously with the horseradish butter and top with the cod’s roe.
